How to Cook Pasta

Here is a simple guide to cooking perfect pasta:

  1. Boil Water: Use a large pot and fill it with plenty of water. For every pound (450g) of pasta, use about 4-6 quarts (4-6 liters) of water. Bring it to a rolling boil.
  2. Salt the Water: Once boiling, add a generous amount of salt (about 1-2 tablespoons for a large pot). This is your only chance to season the pasta itself.
  3. Add the Pasta: Add the pasta to the boiling water and stir immediately to prevent sticking.
  4. Cook According to Package: Cook for the time indicated on the package, stirring occasionally. For the best texture (al dente), taste a piece a minute or two before the suggested time is up.
  5. Reserve Pasta Water: Before draining, save about a cup of the starchy pasta water. It’s great for adjusting the consistency of your sauce.
  6. Drain and Sauce: Drain the pasta (do not rinse it, unless making a cold pasta salad) and immediately toss it with your chosen sauce in the pot or a warm bowl.
