How to Cook Chofan (Cuban-Style Fried Rice)

Chofan is a flavorful Cuban-Chinese fusion dish that combines fried rice with savory ingredients like pork, chicken, or seafood. Here’s a step-by-step guide to making it at home.

Ingredients

  • 3 cups cooked white rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (any color)
  • 2 cloves garlic, minced
  • 1/2 cup diced cooked pork, chicken, or shrimp
  • 2 eggs, lightly beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1/2 cup frozen peas and carrots, thawed
  • Salt and pepper to taste
  • Green onions, sliced (for garnish)

Instructions

  1. Prepare the Rice: Use day-old rice for best results, as it’s less sticky. Fluff it with a fork before cooking.
  2. Heat the Oil: In a large wok or skillet, heat the vegetable oil over medium-high heat.
  3. Sauté Aromatics: Add the diced onion and bell pepper. Cook for 3–4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds.
  4. Add Protein: Add your choice of cooked meat or shrimp and stir-fry for 2–3 minutes until heated through.
  5. Scramble the Eggs: Push the ingredients to one side of the pan. Pour the beaten eggs into the empty space and scramble until fully cooked. Mix everything together.
  6. Combine with Rice: Add the cooked rice to the pan, breaking up any clumps. Stir-fry for 2–3 minutes until the rice is heated and well combined.
  7. Season: Pour in the soy sauce and oyster sauce (if using). Add the peas and carrots, and stir to coat everything evenly. Season with salt and pepper to taste.
  8. Garnish and Serve: Top with sliced green onions and serve hot.

  • Use cold, day-old rice to prevent the dish from becoming mushy.
  • Customize with additional vegetables like corn, broccoli, or mushrooms.
  • For extra heat, add a dash of hot sauce or red pepper flakes.
